Do The Prep Work

In my teens, I used to work in a kitchen in a 5-star hotel; I started by washing dishes and peeling potatoes, and day after day, I did the things that no one else wanted to do.

Then slowly, over time, I was allowed to prepare some simple meals and prepare the ingredients for some of the main meals.

That is the first lesson for today:

Bad Things Happen… Stick To The Plan Or Improvise

The head chef was pretty typical for a chef back in the 1970’s, always drunk, always stressed but amazingly talented.

No matter the situation and how much everyone else was panicking, he always turned out amazing food, and as a result, the dining room was fully booked most evenings.

Suppliers forgot deliveries, freezers broke, and ingredients were dropped (or thrown).

It didn’t matter what happened in the Kitchen, from the dining room, everything looked like perfection. The customers were none the wiser to any issues that jeopardised their meals.
